Established by former Michelin chef James Hayward in 2017, J.W. Fine Foods opened as  a small deli within the garden centre yard at Woodborough. Here we have established a reputation for JW Fine Foods’ home-smoked Scottish Salmon and Sea Trout, as well as our own cured salmon (gin and coriander or liquorice, soy and beetroot).

We are proud to source our salmon directly from Westerross in Scotland. We prepare and cure to our own recipe “Stonehenge Cure” and smoke over oak. To produce the finest sides of exquisite salmon.

Freshness and quality, so…

  • I source our salmon from Scottish Lochs.

  • ‘All natural’ hand-reared at Westerross.

  • Raised with no antibiotics, no growth promoters, no GMO and RSPCA freedom food approved.

  • My salmon are delivered within two days of harvesting. (Avoiding the market and therefore reaching us in peak freshness.

  • I prepare, dry cure to my own recipe and cold smoke over whisky oak. 

  • The sides are hung for two days after smoking at 3c to equalise the smoke and salt to create the magic.

  • Then sliced by hand with all the irregularities of human involvement.

In Store

We also stock a carefully-selected range of regional and continental produce including British cheeses, Iberico ham, Italian fennel salami, Sobrasada (spreadable salami), Manchego and Membrillo as well as homemade pates, terrines, fine wines, condiments and culinary gifts. We can create bespoke hampers to order.
